Chicken, Peppers and Onion Naan Pizza

I don't know about you, but I don't usually do anything real fancy for lunch. I want it to be quick, delicious and filling. This pizza was not the typical pizza you might make at home. I switched it up a little by using naan instead of pizza dough and then loaded it up with veggies, chicken, garlic, and cheese.

Chicken, Peppers and Onion Naan Pizza

  • 1 chicken breast cut into thin strips
  • 1 green pepper cut into thin strips
  • 1/2 of an onion thinly sliced
  • 8 slices of fresh mozzarella (or however much shredded mozzarella you like!)
  • baby spinach (however much you prefer)
  • 1 teaspoon minced garlic
  • 3 teaspoons olive oil for the pizza + 1 tablespoon for cooking in the pan
  • salt & pepper to taste

Cut the peppers, onions and chicken. Salt & pepper the chicken strips.

In a saute pan, heat 1 tablespoon of olive oil and cook the strips of chicken until lightly golden on the first side and then flip.

Add the peppers and onions to the pan and cook just until the chicken is cooked through and some of the crunch is out of the peppers. About 4-5 minutes over medium heat.

In a small bowl, mix 1 teaspoon of garlic and 3 teaspoons of olive oil.

Spread the oil and garlic over the top of the naan.

Place the spinach, peppers, onions and chicken on your pizza.

Cover it with the sliced mozzarella cheese

Bake in the oven for 10-12 minutes @ 400 degrees. If you want to get a nice golden cheese on top you can put it under the broiler, but watch it constantly to ensure that it doesn't burn (this can happen VERY quickly).

Slice and serve!

If it tastes anything like it looks, then it must be amazing.
