These breakfast cups are fast, easy and delicious!
Ham and Cheese Breakfast Cups
- 1 can refrigerated biscuits
- 6 eggs beaten (or egg beaters)
- 5 oz diced ham
- shredded cheddar cheese
- 1/4 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- pinch of pepper
Spray muffin cups with cooking spray. You can either use 10 regular muffin cups or 6 large muffin cups.
Press biscuits firmly in the bottom and slightly up the sides of the muffin pan.
Heat a non-stick skillet on medium heat and coat with cooking spray. Add eggs, garlic powder, salt and pepper. Scramble until they are almost set, but still have some moisture.
Stir in the ham. Divide the eggs evenly among the muffin cups. Top each with 1 tablespoon of shredded cheese.
Bake in the oven at 400 degrees for 10-13 minutes or until lightly golden brown.
