Grilled Pork Chops, Baked Sweet Potato and Tossed Salad


I have to tell ya that this healthy stuff isn't all that bad. Since I started eating healthier, exercising and tracking my calories I have noticed that I have a lot of extra calories at the end of the day that I get to even have snacks without feeling guilty. Today I was super good and ran on the treadmill for 2 miles and then did Zumba tonight! Only problem is that all that exercising equals more calories I should be eating and I am too full! Dinner was so filling that I almost couldn't eat it all. If that's the worst of my troubles then I would say I've got it made! ;)

I guess I get to have a nice snack today! Yay!

I'll give you a brief overview of what my day looked like today.

Breakfast was pretty basic. I made 1/2 cup of egg beaters and tossed in some mild pepper rings for a little heat. I paired it up with some absolutely amazing Italian raisin bread from Mastroianni Bro's. I don't know if you are a fan of egg beaters, but I am and 1/2 cup makes a lot of eggs! It was a very filling breakfast.

Lunch was on the run today. I had to take the baby to the doctor for a check up and knew that if I didn't grab something while I was out running errands that I would end up skipping lunch altogether. Since I didn't want to do that I decided to grab the healthiest thing I could get in a drive thru, a Dunkin Donuts egg white veggie flatbread. I paired it up with a nice cup of coffee and ate in the car. Not bad for a drive thru meal, I suppose.

Dinner was fantastic. It is weird to not really have a "recipe" for my meal, but it was just too easy and there aren't really instructions.


I pierced the sweet potatoes with a bunch of holes and stuck them in the toaster oven (why use the regular oven if you don't have to?) for an hour @ 400 degrees. They were absolutely perfection. A little dab of Olivio Light butter (maybe a teaspoon) and some salt and pepper was all it needed. These sweet potatoes were massive and I loved every bite of it.

I paired the sweet potatoes up with pork chops. I got some center cut boneless pork chops and kept them pretty simple. Salt and pepper followed by a little bit of teriyaki sauce combined with fresh grated ginger brushed on them. I used 4 tablespoons of the teriyaki sauce and about 1 teaspoon of fresh grated ginger. Tossed them on my indoor grill and cooked them up!


What was the perfect thing to round out this meal..? Salad! I made a similar salad to the one that I had last night for dinner. The base was mixed greens and baby spinach and then I tossed in any and every veggie I could find in the fridge. Green bell peppers, red bell peppers, red onion, english cucumber, carrots, tomatoes and even through in a few black olives.

Look at the size of that sweet potato. It's like double the size of the pork chop! LOL Now THAT is what I call a sweet potato! I ate until I literally couldn't eat any more and the whole meal was only about 400 calories. Amazing, right?

Sorry for the lack of excitement in my post, but this was good food at its finest. Simple and delicious. It appears that good food doens't always equal an exiciting blog post :)
