Cappuccino Shortbread

I am a very lucky girl. I recently won a giveaway and received a prize pack from Tate's Bake Shop. If you have never heard of Tate's, it is a bakery located in Southampton, NY that has some of the most amazing baked goods around. They recently won a 50 brand taste test for the best chocolate chip cookie in America! When I found out that I won, I was very excited!


I received a copy of their cookbook


and I also got a gift box with three boxes of their cookies!!


When a free cookbook and box full of cookies showed up on my doorstep it was like the heavens opened up and sang to me! lol Does it get much better than that?

I immediately sat down and looked through the cookbook to see what amazing new recipes I could find. I instantly knew that I would make Cappuccino Shortbread. I'm not if I've mentioned this before, but I am basically a coffee junkie. If I had to choose between eating breakfast or having coffee, I think I almost always would pick my coffee. I have a serious coffee addiction and I am not ashamed to admit it. Put coffee in just about anything and I am ALL OVER IT! Shortbread is also one of my favorites...full of butter and deliciousness. Then I looked at the recipe and it completely sealed the deal, it was almost one of the easiest things to make...EVER!

Cappuccino Shortbread


  • 1/2 cup plus 2 tablespoons salted butter, at room temperature
  • 1 1/4 cups all purpose flour
  • 2 teaspoons instant espresso powder
  • 2 tablespoons firmly packed dark brown sugar
  • 1 teaspoon cornstarch
  • 1/2 cup confectioners sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/2 cup chopped semisweet chocolate
Preheat oven to 325 degrees

Mix all the ingredients except for the chocolate in a mixing bowl (I used my stand mixer). Mix until everything is combined. Add the chocolate and mix again to incorporate.



Spread the mixture into an ungreased 9 inch square pan. You can use aluminum foil in the bottom of the pan to make it easier to remove and cut later. Press it down gently with a spoon and/or your hand evenly.


Bake for 30 minutes or until it is golden on the edges.



Let it cool in the pan and cut into squares (or any shape you like).


It's really THAT easy and absolutely delicious!

These cookies look great! So many people have been posting amazing recipes from this cookbook, I think I might have to go out and get it!
