Brownies Extraordinaire

Brownies Extraordinaire is not what Eva Longoria calls them in her cookbook, but that is what I decided to call them after I devoured one a little while ago. Remember when we had our last giveaway and I told you that I picked up an additional copy of Eva's new cookbook for myself? Well, I used it for the first time tonight and I can definitely tell you that these brownies were worth every dime of the money I spent on the book. I have no idea how she has such a great figure with these things lurking about in her house! A super simple recipe that is definitely a keeper!


Brownies Extraordinaire

  • 1 stick unsalted butter
  • 4oz bittersweet chocolate, chopped
  • 3 large eggs
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 1 cup chopped nuts *optional* (I did not use them)
Preheat oven to 350 degrees

Grease a 9 x 12 baking pan. I always keep some cooking spray made for baking in my cabinet at all times. It is different from the regular cooking spray because it contains flour to keep the baked goods from sticking to the pan. It sure beats greasing and flouring pans if you ask me!

Place the butter and chopped chocolate in a small saucepan over a very low heat. If you turn the heat up too high you will scorch the chocolate. Stir occasionally and remove from the heat when it is completely melted. Pour the chocolate into a liquid measuring cup to cool completely.




In a mixing bowl, beat the eggs. Add the sugar to the eggs and beat to combine. Once the chocolate is cool, add them to the egg mixture with the vanilla and stir until it is incorporated.



Add the flour and salt and stir just until combined.


Pour the batter in your greased pan and baked for 20-25 minutes or until a toothpick inserted reveals only a few crumbs. Mine were perfect at about 23 minutes.


Place the hot pan on a wire rack and allow them to cool completely. <--- this is the hardest part. Just keep reminding yourself that if you try to eat them while they are too hot you'll burn your tongue and won't be able to taste them anyway. Cut them into squares (or just dive right in, I won't judge you).


Look at the inside of that brownie!!! That is perfection.
