Spinach and Artichoke Flat Bread Pizza

It's Friday!!! You know what that means...pizza!!! I love me some pizza and today was the perfect day to make it. I had to eat quickly and then bolt out the door to take Isabella to a Girl Scout meeting. This whole pizza only took minutes to put together and it baked in the oven in a flash. Let's not forget that it was also healthy; coming in at only 233 calories per pizza. You could have a few pizzas when they are that good for you!


Spinach and Artichoke Flat Bread Pizza

  • Flat Bread (I used Flat Out Healthy Grain Harvest Wheat)
  • 1/2 teaspoon minced garlic
  • 1/2 cup baby spinach
  • 2 artichoke hearts, roughly chopped (I used canned artichokes in water)
  • red onion slices
  • red bell pepper strips
  • 1/4 cup Cabot 50% reduced fat shredded cheese
Preheat oven to 400 degrees

Place flat bread on a baking sheet and bake for just a few minutes to get the flat bread a little "toasty". You don't want a soggy pizza! You also don't want a piece of cardboard, so watch it carefully and only bake it a few minutes!


Spread the minced garlic over the flat bread and sprinkle with a little kosher salt and pepper.


Layer on the baby spinach, artichokes, onions and peppers.



Cover with the shredded cheese and bake in the oven for about 10 minutes, or until the cheese is melted.


This was *really* good! I think I might even toast up some of this flat bread tomorrow to use as dippers for a healthy appetizer...maybe there will be another blog post coming up!
