Radiance Fruit Salad

This has to be one of the most flavorful and fresh fruit salads I've ever had. I've made this at least four or five times now and I love it just as much as the first time I made it. Let's not forget that it is a good healthy side to add to any dish. This recipe came from one of my favorite healthy food chefs, Ellie Kreiger. I changed a few things, but it is her recipe. I opted for agave nectar instead of honey and reduced the kiwi and mint a little.


Radiance Fruit Salad


  • 1/2 cantaloupe, cut into bite size chunks
  • 1 (16oz) container of strawberries, cut into quarters
  • 3 kiwis, skin removed and cut into pieces (I used two...only because I didn't have a third in the house)
  • 1 teaspoon lime zest
  • 3 tablespoons lime juice (which was the juice of one lime)
  • 3 tablespoons agave nectar
  • 2 tablespoons mint, cut into thin strips
Cut the cantaloupe in half, scoop out the seeds and remove the rind however you find easiest. I cut mine into segments and then removed the rind, but I think it would have been easier to either remove it all at once or to just scoop the cantaloupe out with a melon baller.


Remove the stems of the strawberries and then cut into quarters.


Cut the kiwis in half and then scoop the fruit out of the skin with a spoon (the same way that you would an avocado). Cut into small pieces. I also squeeze the extra juice from the skin over the fruit for the extra flavor :)


Put all of the fruit in a large bowl, sprinkle the mint over the top and set aside.


Zest the lime and add it to a small bowl.

Squeeze the lime juice over the top and add the agave nectar. Stir to combine and pour over the top of the fruit salad.


I served mine with a healthier version of grilled cheese. I used Nature's Pride Oven Classics Oatmeal Bread with a little bit of Light Olivio Spread and two slices of Kraft Fat Free American Cheese. The grilled cheese was actually *really* good. I couldn't believe it considering that I am a huge CHEESE HEAD. I love cheese and that could very well be one of the reasons I need to lose a few pounds! lol This delicious meal came in at 322 calories!

I love salads...this is by far one of the better salads, though. I love the colors, the flavors, and that agave! Beautiful!

Yum! It's been too long since I've had fruit salad and this looks fantastic.
