Remember those kluski noodles that made an appearance in my soup a few days ago? I used them again in this dish instead of the rice that I would normally use. Those noodles are great and I can't believe I've never had them until now!
Turkey Stir Fry
- 1 pound turkey cutlets cut into thin strips
- 1 bag frozen stir fry vegetables
- 1/2 pound noodles (I used the kluski noodles but you could use rice or anything you like)
- 2 teaspoons extra virgin olive oil
- 2 teaspoons minced garlic
- 4 tablespoons teriyaki sauce
Bring water to a boil and get the noodles cooking. Cook the noodles until they are al dente.
Add the vegetables to a pot with 1/4 cup of water and the minced garlic. Cook covered for 4-5 minutes and remove from the heat.
Cut the turkey into thin strips and give them a little sprinkle of salt and pepper. Try not to add too much salt because the teriyaki sauce has salt in it.
Add the olive oil to a non stick saute pan and place the turkey in the pan in a single layer. Cook on the first side until it is golden brown, about 4 minutes.
Turn all the meat over to the second side and cook an additional 3-4 minutes, or until it is cooked through.
Once the meat is done you can add the vegetables and noodles to the saute pan.
Add the teriyaki sauce and stir to combine.
Another low calorie and yummy meal! I also sprinkled on some chives right before serving. This made enough to feed 5 people and was approximately 280 calories per serving.
