Tilapia Foil Packets
Preheat the oven to 400 degrees.
I didn't list an amount for the corn, peppers and zucchini because you can use as much or as little as you like. Just make sure that you have enough of a "bed" for your fish to rest on and everything will be fine. I did about 2 tablespoons corn, 2 tablespoons zucchini, 1/2 tablespoon red onion and 1 tablespoon of both kinds of peppers for each packet.
I served mine with some garlic parmesan risotto and a side salad. Unfortunately, there is no recipe for my risotto because I bought a box of instant risotto! Now you know my terrible secret. I have yet to make a successful risotto on my own. Every time that I have attempted it I haven't been happy with the results. I will continue working on it and I will definitely share a recipe with you when I feel I have one worthy of sharing.
This entire meal came in at 329 calories! Not too shabby!
- Tilapia fillets (I made three, but you can make as many as you need)
- extra virgin olive oil
- cooking spray
- seafood spice combo
- corn, fresh or frozen
- 1 small zucchini
- red onion
- red bell pepper
- yellow bell pepper
- 1/2 teaspoon minced garlic for each packet
- 1 lemon

Cut all your veggies into small pieces so they aren't too much bigger than the corn. Mix them all together with the minced garlic. Spray a piece of aluminum foil with cooking spray and place the veggies in a pile in the middle of the foil.
Brush both sides of the tilapia with a little olive oil. Sprinkle with whatever seasoning you like. I used a seafood spice combo so all I had to do was sprinkle it all over the fish. Use as little or as much as you like. Season both sides of the fish and then place the fish on top of the veggies.
Squeeze some of the lemon juice over the top of the fish and then seal the packet shut. Make sure to leave some room at the top of the packet for air to circulate, while still creating a good seal on all the edges.
Bake in the oven at 400 degrees for 15 minutes or until the fish is opaque and cooked through.
