Spicy Buffalo Chicken and Cheese Pizza Rolls

The first time that I made pizza rolls they were a huge hit. If your house is anything like mine, then Sunday = football. These were a perfect snack for watching the game!



Spicy Buffalo Chicken and Cheese Pizza Rolls

  • 1 store bought pizza dough
  • 1 chicken breast, cooked and shredded
  • 1/4 cup cream cheese
  • buffalo wing sauce
  • mozzarella cheese (about 1 tsp for each pizza roll)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon italian seasoning
  • 1 tablespoon parmesan cheese
  • 1 tablespoon butter, melted
Preheat oven to 375 degrees.

Place the chicken breast on a baking sheet. Brush with a little olive oil and sprinkle liberally with kosher salt and pepper. Bake in the oven for exactly 35 minutes.



Remove from the oven and let stand for about 5-10 minutes to cool and allow it to retain its juices. Using two forks, shred the chicken breast. This video isn't that great, but it gives you the general idea. I tried to explain to a few people how to do this in the past and it is kind of hard to explain! Hold the fork in your left hand still to keep the chicken breast from moving and use the fork in your right hand to pull in the opposite direction to shred the chicken. You should be pulling the chicken with the "grain" and it should shred perfectly.




Keep the oven on and increase the temperature to 400 degrees.

On a lightly floured surface roll or stretch out your pizza dough into a rectangle.


Spread the cream cheese over the entire surface of the dough. I found it was pretty easy to spread the cream cheese with the back of a spoon.


Cut the dough into 15 even squares using a pizza cutter or a knife.


Cover each square with some of the shredded chicken and a drizzle of wing sauce. How much wing sauce you use is really up to you. I was fairly heavy handed with the wing sauce because we like spicy food in our house, but use caution if you aren't a fan of spicy food. I used about 1 teaspoon of shredded mozzarella for each square.



Now pull up the corners to the middle and pinch it closed so it is tightly sealed. Place it in a pie plate that has been coated with cooking spray. Continue until all the pizza rolls are done.


Melt the butter in the microwave. Brush the butter on the top of the rolls. In a small bowl combine the garlic powder, italian seasoning and parmesan. Sprinkle on the top of the pizza rolls.


Bake uncovered for about 20 minutes or until lightly golden brown.
