Baked Brie in Puffed Pastry with Hot Pepper Jelly

I've seen this recipe quite a few times online and I finally had to make it. I *love* spicy food and brie is one of my absolute favorite cheeses. The idea of wrapping them up together in pastry is like a dream come true for me!! If you aren't a fan of spicy food you can absolute substitute the hot pepper jelly out for any other kind of jelly or chutney. This is even really good without the jelly!


Baked Brie in Puff Pastry with Hot Pepper Jelly


  • 1 8oz wheel of brie cheese
  • 1 sheet of puff pastry
  • 2 tablespoons hot pepper jelly


Preheat the oven to 400 degrees and lightly grease a baking sheet with cooking spray.


Defrost one sheet of frozen puff pastry until it is flexible enough to unfold without ripping it. Flour your surface to prevent the dough from sticking and roll it out to make a slightly bigger sheet of pastry.


Keep the brie nice and cold until right before it is time to use it. Try to buy a wheel of brie that has the really thin rind that is edible and delicious. If you have a thicker rind on your brie, you can use a knife and clean it up a little by taking some of the thicker parts off. Cut the brie in half so you can put the jelly in the middle. This works so much better when you are using cold cheese! :) Spread the jelly in the middle and then place the other half of the brie on top.

Place the brie in the center of the pastry and then trim it a few inches around the outside edge to remove the excess dough. Wrap the dough around the brie and seal it as best you can to prevent the cheese and jelly from oozing out after you bake it. If you want to, you can cut a pretty shape out of the excess dough and put it on top!



Brush the entire surface of the pastry with an egg wash made from an egg white and a little water. Bake for 15 minutes or until light golden brown. Make sure to let it sit for a few minutes before you dig in or the cheese will ooze out all over!

I love to serve this with fresh bread or your favorite crackers!
