I immediately sat down and looked through the cookbook to see what amazing new recipes I could find. I instantly knew that I would make Cappuccino Shortbread. I'm not if I've mentioned this before, but I am basically a coffee junkie. If I had to choose between eating breakfast or having coffee, I think I almost always would pick my coffee. I have a serious coffee addiction and I am not ashamed to admit it. Put coffee in just about anything and I am ALL OVER IT! Shortbread is also one of my favorites...full of butter and deliciousness. Then I looked at the recipe and it completely sealed the deal, it was almost one of the easiest things to make...EVER!
Cappuccino Shortbread
Mix all the ingredients except for the chocolate in a mixing bowl (I used my stand mixer). Mix until everything is combined. Add the chocolate and mix again to incorporate.
Spread the mixture into an ungreased 9 inch square pan. You can use aluminum foil in the bottom of the pan to make it easier to remove and cut later. Press it down gently with a spoon and/or your hand evenly.
- 1/2 cup plus 2 tablespoons salted butter, at room temperature
- 1 1/4 cups all purpose flour
- 2 teaspoons instant espresso powder
- 2 tablespoons firmly packed dark brown sugar
- 1 teaspoon cornstarch
- 1/2 cup confectioners sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon cinnamon
- 1/2 cup chopped semisweet chocolate

Let it cool in the pan and cut into squares (or any shape you like).
It's really THAT easy and absolutely delicious!
