Overnight Oats
There is nothing better than waking up to a house that already smells like someone is in the kitchen making you breakfast. Oh wait...that was you...last night. Now you can sleep in a little longer because breakfast is already waiting for you in the kitchen!
Overnight oats are made with steel cut oats. For those of you who do not know there is quite a big difference between steel cut and regular oats. The consistency is the first thing you will notice.This has to do with how the oats are processed. Many people think that steel cut oats are healthier for you than regular oats, but this apparently has not been proven. The term "steel cut" is actually given because the oats are cut with a steel blade...usually around two or three times. Normal oats are rolled and processed much more than steel cut oats. Even once they are cooked you will notice the difference. I personally am a big fan of steel cut oats! Okay...moving on..
- 1 cup steel cut oats
- 3 cups water
- 1 6oz container Chobani vanilla greek yogurt
- 1/2 cup pumpkin puree
- 2 tablespoons white sugar
- 1 banana mashed (plus a few slices to add once it's cooked)
- 1/8 teaspoon cinnamon
- a pinch of nutmeg
- 2 teaspoons brown sugar
In a slow cooker or crockpot add the steel cut oats, water, pumpkin puree and yogurt. Stir until thouroughly mixed. Mash up your banana really well with a fork. Add the banana, cinnamon, both kinds of sugar and nutmeg to the crockpot. Stir to incorporate.

Scoop yourself out a bowl and top it with whatever you like. I think I will have mine with sliced banana, a little bit of chopped pecan and a dusting of cinnamon sugar! Yummmmmy!
Sounds yummy to me! How long does it need to cook? Also, what if I don't have the yogurt? Can I just add a little vanilla and some extra water?
ReplyDeleteOvernight...so about 8-9 hours. I started mine at about 9:30 last night before I went to bed. If you don't have the yogurt that is completely fine! You can either up the water to 4 cups or you can use 3 cups water, 1 cup milk or all milk. It's all preference. I like the taste of the yogurt and there is TONS of protein in the greek yogurt, so it is *super* filling.
