I decided it was time that I finally try it for myself. This recipe was quick, easy and delicious. You can find her recipe here:
Julie's Famous Banana Bread
(best eaten the next day but I've never really known it to last that long)
Preheat Oven to 325F (325!!!! NOT 350.. 350 is TOO hot and you'll get burnt bottoms and raw middles)
- 3 large ripe bananas
- either 1/3 cup of butter melted and cooled OR 1/4 cup of butter and 1/4 cup of applesauce
- 3/4 cups of sugar
- 1 egg
- cranberries/raisins/coconut/nuts/chocolate chips/butterscotch chips/whatever floats your boat
- 1.5-2 cups of flour (can be 1/2 cup whole wheat + rest white)
- 1 teaspoon of baking soda
Mash the crap outta the bananas. Add the sugar and keep on pulverizing it. Add the butter and/or applesauce depending on how fattening you want them to be. Add egg and stir it up good. Add in the the add-ins of choice to taste (this part is usually Chloe's job). Add dry ingredients to wet ingredients. Start with 1.5 cups of flour. You should have sticky gooey hard to stir paste like batter. It should still be wet looking but definitely NOT runny. If it's runny add more flour. Spoon into either a bread pan or mini-bread pans or muffin tins that you have either rubbed butter on or sprayed with PAM. Cook until middle comes clean with the toothpick test (or it bounces back from a finger poke which while my usual testing method can get a little hot).
I used 1/4 cup of chocolate chips and needed about 1 3/4 cups of flour to get it to the right consistency. Isabella was very happy to wake up to these this morning. Fantastic recipe, Julie! I know we'll be making this again and again!
